The first screen after installing is the app itself. Because the single-user app never contacts a server, there is no account for it to contact one with.

Why an account was never added
An account exists to identify a device to a server. This app has no server for the single-user mode, so the account would be decoration — a form standing between you and the thing you installed, plus a password to reset later and an e-mail address in someone else database.
Removing it changes the first minute completely. Install, open, tap add customer, type a name. That is the entire onboarding.

Where a Google account does come in
Two optional things touch a Google account, and both are opt-in. The first is the Play Store itself, which is how you installed the app. The second is the paid team workspace: it syncs through the manager own Google Drive, so the manager signs in with Google when they create a workspace. Staff join with a six-character code and are not asked to sign in to anything of ours.
If you never touch the team feature, you will never see a sign-in screen.

What personal data does the app collect about me?
None in personal mode. There is no account, no profile, and no analytics identifier attached to your customer records. The data you type stays in the local database on your device.
If there is no account, how do I move my data to a new phone?
With the backup file. Create a backup on the old phone, copy the file across by any means you like, and restore it on the new phone. Nothing is tied to an identity.
Do I need a Google account for the team workspace?
The manager does, because the workspace lives in the manager own Google Drive. Members join with an invite code and do not sign in to any service of ours.
